A little legend has it that curry puff or what is known locally as karipap was invented by the Malays, an ethnic group of Austronesian people predominantly inhabiting the Malay Peninsula and parts of Sumatra and Borneo.

Curry puff, a simple tasty snack is loved by everyone of all ages in Malaysia. It is a popular choice for breakfast or as an afternoon snack. Curry puff can be found at many stores, especially at Malay, Chinese and Indian food stalls, public markets and trendy cafes. It is a small pie of thick curry potatoes in a pastry shell. Some might find it similar to Cornish pasty, Indian samosa or Mexican empanada.

For the filling
Chop spuds to small cubes. Fry chopped garlic and onion until golden. Add in the curry and tumuric powder,
add in the spuds, put in just enough water that you can see the spuds and not totally drown it. Keep the fire
medium, cook until it all becomes thick and the puds are well soft.

For the pastry
Place flour in a mixing bowl. Rub in margarine and water. Knead into a smooth dough and leave aside to rest
for 10 minutes. Divide into small equal portions. Flatten the dough using a rolling pin to shape a thin circle.
Add filling and seal the sides. Pinch the edges to form a scallop design or any design. Fry puffs in medium hot oil.

 
 

Because of its simplicity and universal appeal, curry puff quickly became popular outside Malaysia and became widely available throughout the South East Asian region especially in Singapore and Thailand.

In the tiny island state of Singapore, curry puff is widely available through kiosk and supermarket and there are some established brands of curry puff that has been around for more than 50 years, now being produced in modern factories.

In Thailand curry puff is known as kalee pap, and the Thai has a curry puff capital in Saraburi, a small town about 100 km north of Bangkok and located along the main north-south highway. Here you can find strategically lined shops selling varieties of curry puffs by the thousands a day.
